apple peanut butter oatmeal cookies


Just the greatest combination of two ingredients I’ve always had: apple slices and peanut butter. Amazing and healthy and delicious all rolled into one cookie. I have to add that these cookies are very oaty… jam-packed with oats. So if your not a fan, then consider another cookie. I loved the fiber and taste myself. They are soft and chewy breakfast and snack perfections.

Ingredients:

  • 1/2 cup flour
  • 1/2 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temp.
  • 1 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1.5 cups old fashioned oats
  • 1 large apple, cored, peeled & diced

Directions:

Preheat oven to 350 F. Line cookie sheet with parchment paper.

In a medium bowl, whisk together the first 4 ingredients. Set aside.

In a large bowl, using an electric hand mixer, beat together the butter and sugar until creamy. Add the peanut butter, egg and vanilla and mix together until combined. Next, slowly add the flour mixture (a little at a time) until fully incorporated. Lastly, fold in the oats and then the apple pieces. Form your cookies and place on cookie sheet. Flatten with your fingers. Bake for 11 minutes. Even if they look uncooked.. take them out of the oven and let them set/cool, prior to eating.

Yields 22 cookies.
