broccoli feta fritters – Hungry Happens


Made with feta and dill – this is serious stuff right here and a great way to eat broccoli… which isn’t always the easiest thing to do.

These are so tasty – no dip/sauce required.  Although would pair well with tsatziki sauce.  When I made them, they were all gone in less than 30 minutes.  And the kicker is that they’re flourless and breadcrumb free.

Ingredients:

  • 3 cups broccoli, steamed & finely chopped
  • 1/3 cup crumbled feta cheese
  • 3 scallions, fine chop
  • 2 tbs fresh dill, fine chop
  • 2/3 cup almond flour
  • 2 eggs, beaten
  • 1 tbs olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper

Directions:

Make sure to dry the broccoli with a  paper towel as best you can, without mashing it.
Using your hands, combine all ingredients in a bowl.

Form the patties and place on wax paper.
Heat a nonstick skillet on medium high.
When it gets hot, place the patties on the pan. Slightly flatten each fritter with the spatula, if needed.
Cook on LOW HEAT for 5 mins on each side (like pancakes).
You can also bake them on a parchment paper lined baking sheet at 400 F. for 15-20 mins or until golden brown.

Yields 9 fritters.
