brownie batter pancakes – Hungry Happens


These brownie pancakes with chocolate ‘syrup’ and fresh fruit.. i mean, do I really need to sell these?  We devoured em in a matter of minutes.    I absolutely adore the ingredients; the oat flour, the cacao powder (you can sub in cocoa powder if need be), and the butternut squash puree – all so healthy.

Ingredients:

1/2 cup flour*

1/3 cup oat flour

1/4 cup cacao powder

1 tsp baking powder

1/4 tsp salt

1/2 cup butternut squash purée**

1/2 cup milk of choice

1 large egg, beaten

1.5 tbs maple syrup

1 tsp vanilla extract

Directions:

*You can use regular all purpose flour for both the flours or sub in gluten free flour as well.

**You can sub in pumpkin puree or mashed banana for the butternut squash.

Combine all dry ingredients in one bowl.
Combine all wet ingredients in another bowl.
Finally, combine all ingredients together.
Yields 10 silver dollar pancakes.

For the warm chocolate sauce melt 1/4 cup choc chips and 1 tsp coconut oil and combine.
