After way too many 90 degree days when I was more than ready to put my fall boots back on, we finally are having cool, crisp autumn air and it’s got me in the mood to dust off my Crock Pot once again.

If you’ve ever had authentic Thai chicken satay, you’ll know it has a sweet and spicy peanut sauce made with flavor-packed ingredients like lemongrass, ginger and crushed red pepper flakes.

Here, I have made an easy and mild chicken satay in the slow cooker, that adds just the right heat from red and yellow bell peppers and everyday pantry staples that can be picked up at Meijer. Served over jasmine rice, it’s a hearty dish so easy to make and so delicious, you’ll keep this as a family favorite!

Easy & Mild Slow Cooker Chicken Satay

Ingredients:

  • 1 1/2 to 2 lbs boneless skinless chicken breasts
  • 1 red pepper
  • 1 yellow pepper
  • 1 medium yellow onion
  • 8 oz coconut milk (found in the Thai foods section of Meijer)
  • 3/4 cup Peter Pan® Peanut Butter
  • 4 cloves garlic (or 2 tsp minced garlic)
  • 3 Tbs La Choy Soy Sauce (I used Lite)
  • 2 Tbs honey
  • 1 Tb lime juice
  • Green onion and La Choy Rice Noodles for topping (optional)

In this version we’ll get our spice from red and yellow bell peppers, add in some yellow onion and place in the bottom of a slow cooker.

First, prep your Crock Pot with superior non-stick PAM cooking spray – now available in a non-aerosol pump version (simply 3 ingredients, 1g fat and 10 calories). Toss in your chunked up peppers and onions.

Now, let’s get to the important part! The yummy slow cooker chicken satay sauce.

You can use either creamy or crunchy peanut butter, but I prefer Peter Pan® Simply Ground – perfect for just a bit of crunch, with wholesome, simple ingredients and packed with protein. Um, I’ll take it right from the spoon!

Scoop a good couple large spoonfuls of Peter Pan® Peanut Butter into a mixing bowl. Add in minced garlic, honey, lime juice and La Choy Soy Sauce, .

Mix well and pour over chicken in the slow cooker.

Cook on high for 3-4 hours, or low for 6-7 hours, then shred chicken with two forks.

Top with green onions and crispy La Choy Rice Noodles. You may even chop peanuts to add on top as well!
