So its valentines day tomorrow and we all decide to cut loose with a special treat finally again. First holiday since new years. But who’s keeping track?
These cookies are chewy and perfect with the icing. Add the colored sprinkles for the days festivities. They will keep your honey happy fo sho.
Cookie Ingredients:
- 2 cups creamy peanut butter, room temp.
- 1 cups brown sugar
- 2 eggs
- 1 tsp baking soda
- 1/2 tsp salt
Preheat oven to 375 F. Line cookie sheets with parchment paper. Mix all ingredients until just combined. Form balls and flatten slightly when you place them on the cookie sheet. Bake for 10-12 minutes. Remove from oven & place on racks.. allow to cool completely before icing.
Frosting Ingredients:
- 8 oz cream cheese, room temp.
- 1 cup powdered sugar
- 1 tsp vanilla extract
In a medium bowl, using an electric hand mixer, beat together the 3 ingredients until smooth and incorporated.
Sprinkles of choice.
Frost and sprinkle cookies generously.
Yields 30 cookies.
