I try to keep our kitchen stocked with healthy snacks for the boys at all times. They may be little, but they have big appetites. One of my favorite snacks to have on hand are energy bites. The boys love them and I love them. Energy bites are easy to make and fun to play around with. I love trying out new flavors. The boys new favorite flavor are these No-Bake Berry Energy Bites.

The boys are berry fanatics. They love berry everything. So when I saw Cheerios’ new Very Berry Cheerios, I knew I had to get them for the boys. They love berries and Cheerios so I knew they would be a hit.

I actually ended up sampling the Cheerios first, don’t tell the boys:) I decided they would be great in energy bites. The Very Berry Cheerios are delicious and have the taste of real berries in every bite including blueberries, raspberries and strawberries. There are #berrieseverywhere! The Cheerios are gluten-free, contain no artificial flavors or colors from artificial sources, and like all Cheerios, have whole grain oats as the first ingredient.

To make the energy bites, I combined oats, Very Berry Cheerios, coconut, ground flaxseed, chia seeds, and salt. Next, I mixed together almond butter, honey, coconut oil, and vanilla extract. I combined the dry ingredients and the wet ingredients and then stirred in dried blueberries to pack another berry punch.

I let the boys help me roll the mixture into balls and they had a blast. Of course, they snacked on some Very Berry Cheerios while we were rolling too. They LOVED the new Cheerios.

I let the boys be my little taste testers. They sampled a Berry Energy Bite and both yelled YUM! Every energy ball is bursting with berry flavor.

These No-Bake Berry Energy Bites are a great snack to have on hand. They only take about 10 minutes to make and will keep in the refrigerator for up to two weeks. They are great to eat on the go or whenever you need a little pick me up!

No-Bake Berry Energy Bites Recipe

No-Bake Berry Energy Bites

These easy no-bake energy bites are bursting with berries in every bite. They are a great snack for on the go or anytime!

Yield: About 30 bites

Prep Time:10 minutes

Total Time:10 minutes

Ingredients:

  • 2 cups quick oats
  • 1 cup Very Berry Cheerios
  • 1/4 cup shredded coconut
  • 1/4 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1/4 teaspoon sea salt
  • 3/4 cup creamy almond butter
  • 1/3 cup honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup dried blueberries

Directions:

  1. In a large bowl, combine the oats, Very Berry Cheerios, coconut, ground flaxseed, chia seeds, and salt.
  2. In a medium bowl, combine the almond butter, honey, coconut oil, and vanilla extract. Stir until smooth. Pour the wet ingredients over the dry ingredients and stir until well combined. Stir in the dried blueberries.
  3. Roll the mixture into small balls. Store the energy bites in the refrigerator for up to 2 weeks.

Note-if your almond butter is too thick, you can heat the wet ingredients together in the microwave for about 20 seconds to make them easier to stir. Use gluten-free oats if you need the recipe to be gluten-free.
