no bake chocolate peanut butter oat bars (vegan & gluten free)


I came across a variation of this bar on Pinterest and was instantly intrigued.  Partly due to the simplicity of the process and ingredients, and also because it sounds really yumm.  Base recipe inspired by moneysavingmom.com

They are incredible; incorporating our all time favorites: chocolate and peanut butter.  The ultimate combination.  And add in oats for texture and heartyness.

Of course there are subs that you can easily make…

Honey for the maple syrup (but that would render it non-vegan)

Butter for the coconut oil (would add dairy)

And make sure the oats are gluten free, if that is a priority to you.

Lastly, you can use any nut butter, such as almond butter or cashew butter.

Ingredients:

  • 1 cup smooth salted peanut butter
  • 1/2 cup maple syrup*
  • 1/2 cup coconut oil
  • 2 cups old fashioned oats
  • 1 cup dairy free chocolate chips
  • 1 tsp vanilla extract

Directions:

Line an 8×8″ baking dish with parchement paper.

In a large non stick pan, on medium low heat, melt and combine the peanut butter, maple syrup & coconut oil.  Make sure not to heat the ingredients on high – mixture will burn.

Remove pan from heat and mix in the rest of the ingredients.  Pour mixture into your baking dish; smooth out top with rubber spatula.  Freeze for 1-2 hours or until set.

Store leftover bars in an airtight container in your fridge.

Yields 18 mini bars.

*you can sub in honey for the syrup but then will not be vegan.
