Skinnytaste Dinner Plan (Week 66).  Anyone else wondering when spring will finally get here? At least we are one step closer this week with St. Patty’s Day on Friday. If you are having a “green” party check out the St. Patrick’s Day tab for ideas like Whole Wheat Irish Soda Bread Muffins or if your child is having a party at school, St. Patrick’s Day  Cake Pops are a great idea!

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here.

Tuesday: Instant Pot Picadillo (tacos)
Wednesday: Leftovers over rice
Thursday: Filipino Adobo Chicken with brown rice
Friday: Crock Pot Corned Beef and Cabbage
Saturday: Dinner Out
Sunday: Chicken and Asparagus Lemon Stir Fry

Shopping List:

BELL PEPPER AND POTATO FRITTATA

  • green bell pepper
  • eggs
  • egg whites
  • kosher salt and pepper
  • olive oil
  • shallots
  • Yukon Gold Potatoes
  • garlic powder
  • paprika
  • lettuce for salad

INSTANT POT PICADILLO

  • 1-1/2 lb 93% lean ground beef
  • onion
  • garlic
  • tomato
  • red bell pepper
  • cilantro
  • tomato sauce (I like Goya)
  • ground cumin
  • bay leaf
  • alcaparrado (capers or green olives would work too)
  • taco shells (optional)

FILIPINO ADOBO CHICKEN

  • 8 skinless chicken drumsticks, on the bone
  • low sodium soy sauce (use gluten-free soy sauce for GF and coconut aminos for Paleo)
  • apple cider vinegar
  • head of garlic
  • peppercorns
  • bay leaves
  • 1 jalapeño (optional)
  • brown rice

CROCK POT CORNED BEEF AND CABBAGE

  • 2 lbs lean corned beef brisket
  • frozen pearl onions
  • carrots
  • parsnips
  • small head cabbage
  • fresh parsley
  • bay leaves
  • whole peppercorns

CHICKEN AND ASPARAGUS LEMON STIR FRY

  • 1 1/2 pounds skinless chicken breast
  • reduced-sodium chicken broth
  • reduced-sodium shoyu or soy sauce (or Tamari for GF)
  • cornstarch
  • canola or grapeseed oil
  • asparagus
  • garlic
  • fresh ginger
  • fresh lemon juice
