sugar spiced salmon – Hungry Happens


Without question, the simplest, quickest and most delicious way to make salmon. Base recipe courtesy of Katie Lee, from the Food Network – love it! The one change I made was subbing in coconut sugar for her brown sugar.

I paired this with a baby spinach salad, avocado & some poms. Dressed with olive oil and some salt. Also had (but not pictured) brown rice.

The greatest meal in under 30 minutes.

Ingredients:

  • 4 wild salmon fillets
  • 1/2 cup coconut sugar (or brown sugar)
  • 1 tbs chili powder
  • 1 tsp sea salt
  • 1/2 tsp ground pepper

Directions:

Preheat oven to 400 F. Line a baking pan with parchment paper.

Combine the sugar, chili powder, salt & pepper in a small bowl. Place the salmon fillets on the baking sheet. Evenly cover the tops of the salmon fillets with the sugar spice mixture. Bake for 15-20 minutes or until cooked through.

Yields 4 servings.
