This cookie represents so many wonderful things. First of all its simple as hell. Nothing I like better than a quick n easy recipe. My absolute obsession these days are dates, aka nature’s candy. They are consumed daily. I get them at Costco. They are cheap af but you don’t sacrifice with quality. They have plump, big and juicy dates. And of course, the peanut butter. A staple.
This cookie is so freaking yummy. Definitely not too sweet, since no added sweetener. The dates provide all the sweetness. For me this is better than okay. We got a healthy, wholesome snack when you want to grab something quick and don’t want the guilt.
I found the base recipe at halfbakedharvest.com . Tiegan’s blog is incredible. Her photos are so stunning. Also, her brother (Red Gerard), just won the olympic gold metal last month for snowboarding. Amazingly unbelievable. Very talented family to say the least. She dipped them in chocolate, which I skipped, since I wanted this to be a healthy treat with absolutely NO added sugar.
Ingredients:
- 1 cup creamy salted peanut butter
- 1 cup packed & pitted medjool dates
- 2 tsp vanilla extract
- 1 egg
Directions:
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Place the first three ingredients in a food processor. Pulse until everything is incorporated. Then add the egg and pulse until combined. Form balls with the dough and place on the baking sheet. Use a fork to press them down slightly and make that crosshatch pattern.
Bake for 9-10 minutes. Do not over bake!
Yields 15 cookies.
