Greek Lemon Chicken with Tzatziki Sauce
- 4 boneless, skinless chicken breasts
- 1/2 cup olive oil
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Tzatziki sauce:
- 1 cucumber, peeled and grated
- 1 cup plain Greek yogurt
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- In a large bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper. Add chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the oven to 400°F (200°C). Grease a baking dish with cooking spray. Transfer the marinated chicken to the baking dish and bake for 25-30 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- While the chicken is baking, prepare the tzatziki sauce. In a small bowl, mix together the grated cucumber, Greek yogurt, lemon juice, dill, garlic, salt, and pepper. Cover and refrigerate until ready to serve.
- When the chicken is done, remove it from the oven and let it rest for a few minutes before slicing. Serve the chicken with the tzatziki sauce on the side.
