Hey Hi Hola! Happy Monday! I’m in gorrrrgeous Punta Cana, sipping on Pina Coladas and dreaming about ways to stay here forever… time here goes by slooooowwwwwly, the sun shines constantly, and the sight of palm trees is the most relaxing shade of green that my eyes have ever seen. ? So welcome to another Monday (Mondays in paradise feel like Sundays, FYI) where there’s not enough time for coffee + a newspaper read, but reason enough for a whirl of fruits and ice in a blender. We certainly need something to help us execute those early morning routines.
Sidenote: Did you guys know that McDonald’s Blueberry Pomegranate Smoothie includes raspberries, too?? I got this top secret insider info from a cousin who worked there as store manager for 10 years. I’m happy she’s no longer there so I can finally share this undisclosed info to the public! ? ?
Right now you are looking at one major flavor bomb. Full of delicious raspberries, blueberries and antioxidant-rich pomegranate juice made into ice cubes, this shot is a healthy start to our mornings.
I mean, it’s like we’re drinking HEALTH. I feel healthier just looking at it! It’s a sign of a right future.
The standout here though is the pomegranate juice ice cubes. My 7-year-old ate all the ones in the tray up there before I had a chance to even experiment with them in this recipe.
We’re going to combine those ice cubes with a healthy dose of blueberries and raspberries, and add some low fat yogurt + almond milk, with a drizzle of agave and a splash of vanilla for good taste. I could easily just eat this combo with a giant spoon, but sipping it through a straw is muuuuch easier on my teeth. Besides, I’m too lazy to chew in the morning. True story. KIDDING! … not really.
Because enough is never enough, we have to add a sprig of mint and some real poms and blueberries to finish it off. It’s the right thing to do. ?

Ingredients
- pomegranate juice
- 1 cup fresh raspberries
- 1-1/2 cups fresh blueberries
- 1/3 cup low fat plain yogurt
- 1/4 cup almond milk
- 2 tablespoons agave
- 1/2 tablespoon pure vanilla extract
- blueberries, pomegranate arils and mint, for garnish (optional)
Instructions
- Pour pomegranate juice in an ice cube tray and freeze. We will need 10 ice cubes for this recipe.
- Combine raspberries, blueberries, pomegranate ice cubes, yogurt, milk, agave and vanilla in a blender; process until smooth and creamy.
- Taste for sweetness and adjust accordingly.
- Pour into glasses and garnish with blueberries, pomegranate arils and mint.
- Serve.
