This is a recipe I created back in March 2013, but for some reason I never uploaded onto the site thereafter. Back then, I didn’t have a blog. I was just starting to cook and post on Instagram and thus, that was my make-shift blog. I would post all my recipes and pics there. Sounds so archaic, I know.
Anyhow, this a beautiful delicious flourless recipe you’ve gotta try.
The toppings are up to you! I used, marinara sauce, and mushrooms, plum tomatoes, fresh mozzarella, olives and onions.
Crust Ingredients:
- 2.5 cups grated cauliflower
- 1 large egg, beaten
- 1 cup shredded mozzarella
- 2 tbs grated Parmesan cheese
- 1 tsp fresh basil, diced
- 1 tsp oregano
- salt & pepper to taste
Directions:
Preheat oven to 425 F. Spray your baking pan with non stick spray.
Place the cauliflower crumbles in a large bowl and microwave for 7 minutes or until they just soften to the touch. Remove from microwave and allow them to cool for 10 minutes.
In the meantime, mix all of the rest of the ingredients in a bowl until combined. Add the cauliflower until fully incorporated to form your ‘dough’. Transfer ‘dough’ to pan and spread out evenly, not too thick, not too thin. I made a 10″ round shape. Bake for 15-20 minutes (keep an eye on it so you don’t burn the sides). Remove from oven and sauce and toppings. Place back in oven for additional 5-10 minutes. Always keep an eye on it.
Remove, allow to cool 5 minutes prior to slicing.
Yields 2-3 servings.
