I had been craving veggie burgers now for weeks. This is a revamp of my old school recipe. And of course we needed to make a 3 course meal of the thing. I highly recommend the add ons I used. This was epic.
Also, I always double this recipe .. it has some prep work so you might as well. They are perfect for meal prep and they reheat amazingly.
Ingredients:
- 1 cup quinoa (COOKED)
- 3 tbs bbq sauce
- 1 tbs canned chipotle pepper, minced
- 1 tbs molasses
- 1 (14.5 oz) can black beans, drained, rinsed & mashed
- 1 carrot, shredded
- 1 jalapeño pepper, minced
- 1 shallot, minced (or 1/4 cup of any onion)
- 1 large garlic clove, minced
- 1/2 cup breadcrumbs (or oats)
- 1/2 tsp ground cumin
- salt & pepper to taste
- 1 egg
Directions:
Preheat oven to 425 F.
Combine the bbq sauce, chipotle pepper and molasses in a small bowl and set aside.
In a large bowl, combine the quinoa, mashed beans, jalapeño, shallot, garlic, carrot, breadcrumb, cumin, salt n pepper, and egg. Add to it 2/3 of the bbq sauce/chipotle/molasses mixture.
Form 5 burger patties and place on a parchment lined baking sheet.
Bake for 20-25 minutes – FLIPPING MIDWAY THROUGH.
****use the remaining bbq sauce mixture as a spread on the burger/bun – heavenly.
Assemble your burger as desired… I used the following fixins:
- kaiser roll
- waffle sweet potato fries
- tomato slices
- avocado slices
- red onion slices
- pepper jack cheese
- mayo & mustard sauce
Yields 5 patties.
