Irish style mashed potatoes with sauteed cabbage, green onions and bacon!
Colcannon is an Irish style of mashed potatoes with cabbage mixed in; common ingredients include potatoes, cabbage, milk and butter. The mashed potatoes are pretty standard, peeled and cubed potatoes that are boiled until tender before being mashed and having the milk and butter mixed in. You can cook the cabbage any way that you want and I like to sauté it in bacon grease, and that allows me to add bacon to the dish as well! In addition to the green cabbage I like to add green onions that are sliced thinly with the whites being sauteed with the cabbage and the greens being mixed into the mashed potatoes at the end. Like any mashed potatoes, you can easily modify the base recipe adding other ingredients/flavours as you desire! No matter how you make Colcannon, it’s a great side for so many meals, especially a corned beef dinner for Saint Patrick’s Day!

Irish style mashed potatoes with sauteed cabbage, green onions and bacon!
ingredients
- 2 pounds potatoes, peeled and cut into 1/2 inch cubes
- 4 slices bacon, cut into 1 inch slices (optional)
- 1/4 head of a small cabbage, sliced thinly
- 4 green onions, sliced and divided
- 1/3 cup milk and/or cream
- 2 tablespoons butter, melted
- salt and pepper to taste

- Place the potatoes in a large saucepan, cover with water, bring to a boil and cook until the potatoes are fork tender, about 15-20 minutes.
- Meanwhile, cook the bacon in another large pan over medium-high heat, about 3-5 minutes, and set aside, reserving 2 tablespoon of grease in the pan.
- Add the cabbage and the whites of the green onions and saute in the bacon grease until tender, about 10 minutes, before setting aside.
- Drain and mash the potatoes in a large bowl.
- Mix the butter and milk into the mashed potatoes.
- Mix the bacon, cabbage and the greens of the green onions into the mashed potatoes, and season with salt and pepper to taste.
Option: Omit the bacon and saute the cabbage in 2 tablespoons butter.
Option: Replace the cabbage with kale.
Option: Replace the green onions with leeks.
Option: Add 2+ whole cloves garlic to potatoes while they boil and mash them along with the potatoes.
Option: Add 1 tablespoon white miso paste along with the butter and milk!
Option: Add a splash of cider vinegar or malt vinegar at the end!
