My beloved flourless muffin recipe.. tweaked once more.
Every morning I typically make a toast. It consists of half a banana mashed and peanut butter mixed in until smooth. I smear this on the toast and then top it with cinnamon. This is my go to. I love it. So I figured why not have it ready in the morning.
These are super moist and amazing. You absolutely must try this recipe… there is no processed sugar, limited sweetener and all natural ingredients. You could probably get to this right now since there are only 7 ingredients probably in your pantry right this second.
Ingredients:
- 2 large ripe bananas (3/4 cup mashed)
- 1 cup smooth salted peanut butter
- 1/4 cup maple syrup
- 1 large egg, lightly beaten
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp vanilla extract
Directions:
Preheat oven to 325 F. Spray a mini muffin tray with oil.
In a large bowl, combine all ingredients until incorporated. Transfer to muffin tray. Bake for 15-17 minutes. Do not over bake, they burn easily.
Yields 18 mini muffins.

You can sub in honey for the maple syrup and any nut butter works.
