One-Pot Creamy Sausage and Tomato Tortellini


This One-Pot Creamy Sausage and Tomato Tortellini is a delicious Italian dinner ready in under 15 minutes!

Pasta is always a winning dish in our house which is why this One-Pot Creamy Sausage and Tomato Tortellini is great for any weeknight meal.

ONE-POT CREAMY SAUSAGE AND TOMATO TORTELLINI

I was facetiming with my sister-in-law and she was telling me how she made my Marinated Caprese Salad for a potluck at work. The only changes she made was that she added cheese tortellini to it. 

I gasped, “Tortellini? Who do you think you are, Garth Brooks?!” 

Then I thought, “Why didn’t I think of that?

Garth Brooks is notorious for adding tortellini to everything. He’s known for his breakfast bowl recipe which…you guessed it, has tortellini in it. 

Who doesn’t like tortellini? Cheese filled tortellini nonetheless.

As with most great dinner dishes, this One-Pot Creamy Sausage and Tomato Tortellini came about on rushed dinner night where I needed something fast.

DO I NEED TO COOK THE TORTELLINI?

The great thing about this dish is that the tortellini cooks right in the same pan as the rest of the ingredients.

HOW TO MAKE ONE-POT CREAMY SAUSAGE AND TOMATO TORTELLINI

  1. In a large skillet, cook the sausage, onion, and garlic.
  2. Add the tomatoes, cream, chicken broth, and tortellini. Cook until tortellini is tender. Add the spinach leaves and cook until wilted. 
  3. Stir in the basil and Parmesan. Serve.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 lb ground Italian sausage
  • 1/2 white onion, diced
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 teaspoon kosher salt
  • 1 (20 ounce) package refrigerated cheese tortellini, uncooked
  • 3 cups spinach leaves
  • 1/4 cup chopped basil
  • 1/4 cup Parmesan cheese

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sausage and onion and cook until sausage is no longer pink. Add the garlic and cook for an additional minute.
  2. Add the full can of tomatoes, cream, chicken broth, salt, and tortellini. Stir to coat and simmer over medium heat covered until tortellini is cooked through about 5-7 minutes. Add the spinach leaves and cook until wilted and sauce has reduced.
  3. Stir in the basil and Parmesan. Serve.

Notes

Don’t have chicken broth? Use cream instead or even water (shhh don’t tell).
