Quick and Easy Greek Lettuce Wraps


These quick and easy Greek lettuce wraps make a perfect weeknight meal. The flavors are amazing (especially that creamy feta dressing!).

Oh man, I love Greek-inspired flavors. Pitas. Gyros. All things cucumber and yogurt and feta. 

Combining those Mediterranean flavors into a lettuce wrap? Brilliant. 

These quick and easy Greek lettuce wraps are a weeknight dinner wonder and so delicious, I could eat them every day for the rest of forever and have no regrets.

Yogurt Mint Feta Dressing

All of the flavors in these lettuce wraps are fantastic, but it’s the bright and punchy yogurt mint feta dressing that really steals the show.

Thank goodness fresh mint is pretty easy to find all year round. It makes the dressing absolutely bounce with personality. 

Creamy and tangy, this yogurt dressing (thick enough to really be a dip) can be made several days in advance. 

Just make sure you leave some for dinner. It’s easy to keep dipping into this amazing stuff. {PS: Whatever you do, do NOT try the yogurt dressing with triangles of warm pita bread; do not, do not, do not.}

A speedy little recipe

Since the ground turkey (or ground chicken) cooks up in no time at all, the rest of the recipe comes together in a flash. 

Although the rather boring nature of lean ground meat might have you yawning, in this case, it gets a zesty boost with some of the same flavors that go into the dressing:

  • garlic
  • fresh lemon juice
  • red wine vinegar
  • plenty of salt and pepper

The result is tender, flavorful meat that works perfectly in a lettuce wrap.

Lettuce for lettuce wraps

If you can find Bibb lettuce, it makes really great lettuce wraps. 

But if it isn’t available, romaine hearts, albeit longer and skinnier, work great, too. 

And if all else fails, you can chop up any variety of lettuce (or spinach or spring greens) and make a heaping salad out of these delicious Mediterranean-inspired ingredients. 

I also think you could ditch the lettuce or add to it and serve every bit of this recipe rolled up in an insane piece of warm flatbread. Oh my heart. YUM.

Ingredients

Dressing:

  • 1/2 cup plain Greek yogurt
  • 1/4 cup crumbled feta cheese
  • 10-12 fresh mint leaves
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red or white wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Pinch black pepper

Lettuce Wraps:

  • 1 1/2 pounds lean ground turkey or chicken
  • Salt and pepper
  • 1 to 2 teaspoons minced fresh garlic
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • Bibb or romaine lettuce leaves
  • Chopped cucumbers
  • Diced tomatoes

Instructions

  1. For the dressing: add all the dressing ingredients to a blender and puree until smooth. It will be thick. For thinner dressing, add water or olive oil a little at a time until desired consistency. The dressing can be made several days in advance.
  2. For the lettuce wraps: in a 12-inch nonstick skillet over medium heat, add the ground turkey or chicken and season lightly with salt and pepper. Cook until no longer pink, breaking the meat into small pieces as it cooks. Drain excess grease.
  3. Stir in the garlic, oregano, lemon juice and red wine vinegar. Cook for 2-3 minutes. Season to taste with additional salt and pepper, if needed. Remove from the heat.
  4. Serve the ground turkey in lettuce leaves/cups topped with chopped cucumbers, tomatoes, and a spoonful of dressing.
