- For safe canning, be sure to first sterilize the jars in hot water right in the pressure cooker using the steam cycle.
- Ensure there are no cracks or chips in the jars that might damage the seal.
- Place the trivet or steam rack in your pot so that the jars aren’t directly touching the bottom of the pot. You could also use the steamer basket.
- Add water to the pot.
- Fill your jars while they are hot, leaving about ½ an inch of headspace.
- Use a clean, damp paper towel and wipe off the rim of the jar to ensure that you have a good seal.
- Once you’ve filled all of your jars and carefully used a jar lifter to place all of them within the instant pot, the next step is to close the lid and make sure the pressure valve is venting.
- Set the cooking time according to your recipe.
- Once it’s finished, wait for the float valve to drop before opening the lid and using your jar lifter again.
- For best results, place your jars on a cooling rack and leave them at room temperature for at least 12 hours before storing.
Is it safe to do Steam Canning in the Instant pot Pressure cooker?
The bottom line is, if you don’t steam your food safely, there will be a food poisoning risk because the jars might not be adequately sealed or contain bacteria such as clostridium botulinum.
While you can safely PRESSURE can low acid foods, to avoid foodborne illness is a good idea to only STEAM can high acid foods such as fruits, jams, tomatoes, tomato sauce green beans, or pickles.
You can’t safely steam low-acid foods like meat or poultry. Stick to those high-acid foods.
