Pizza is a classic. It just is. Whether you like deep dish, pepperoni, barbecue chicken, or simple cheese, pizza is a crowd-pleasing favorite that’s welcome on your weekly menu. The only thing is, most store-bought or take-out pizzas aren’t very healthy. Even the ones marked “organic” may contain processed ingredients and preservatives that you don’t really want. 

Enter this easy flatbread pizza. It offers a unique and healthy twist on your average pizza, with an elevated flavor profile like something you’d find at a great little bistro! Plus, it’s super easy to make – I’m serious! There’s barely any work involved, and you’re left with a wonderful homemade pizza that hits all the right notes.

Is Flatbread Better Than Pizza Dough?

Flatbread and pizza dough are very similar, but there are a few key differences you need to pay attention to. Mostly it’s a difference in yeast. Flatbread is usually unleavened, or sometimes made with a quick rising agent like baking powder, whereas pizza dough is a type of yeast bread.

Flatbread is also usually thinner than pizza, or about the same thickness as a thin pizza crust. Either way, you can often use pizza crust and flatbread interchangeably, depending on what you’re in the mood for. I like to sometimes use this ? Keto Pizza Crust instead!

What You’ll Need

Flatbread pizza is as simple and wholesome as can be. Here are the ingredients things you’ll need to whip up this easy corn and mozzarella version, from the crust to the glaze.

  • Crust: One store-bought flatbread pizza crust (or my awesome keto pizza crust, or another pizza crust of your choice).
  • Olive Oil: A little for the crust, a little for the corn, and a little more for drizzling.
  • Cheese: Fresh mozzarella slices are part of what makes this recipe so good! I like to get a large ball of fresh mozzarella and cut it into fairly thin slices.
  • Corn: You can use frozen corn kernels, thawed and patted dry. Don’t use damp or soggy corn kernels, or the oil will spatter when you grill them!
  • Garlic: Minced fresh garlic cloves add loads of flavor.
  • Green Onions: Green onions, cut into 3-inch pieces, give color and a little bite to the recipe.
  • Salt and Pepper: To taste.
  • Thyme: Fresh thyme leaves make a pretty and fragrant garnish.
  • Balsamic Glaze: For serving. This is available at most grocery stores, or you can order it online.
