deep dish, pepperoni, barbecue chicken, or simple cheese, pizza is a crowd-pleasing favorite that’s welcome on your weekly menu. The only thing is, most store-bought or take-out pizzas aren’t very healthy. Even the ones marked “organic” may contain processed ingredients and preservatives that you don’t really want.

Flatbread and pizza dough are very similar, but there are a few key differences you need to pay attention to. Mostly it’s a difference in yeast. Flatbread is usually unleavened, or sometimes made with a quick rising agent like baking powder, whereas pizza dough is a type of yeast bread.
Flatbread is also usually thinner than pizza, or about the same thickness as a thin pizza crust. Either way, you can often use pizza crust and flatbread interchangeably, depending on what you’re in the mood for. I like to sometimes use this 👉

What You’ll Need
Flatbread pizza is as simple and wholesome as can be. Here are the ingredients things you’ll need to whip up this easy corn and mozzarella version, from the crust to the glaze.
Crust: One store-bought flatbread pizza crust (or my awesome keto pizza crust, or another pizza crust of your choice).
Olive Oil: A little for the crust, a little for the corn, and a little more for drizzling.
Cheese: Fresh mozzarella slices are part of what makes this recipe so good! I like to get a large ball of fresh mozzarella and cut it into fairly thin slices.
Corn: You can use frozen corn kernels, thawed and patted dry. Don’t use damp or soggy corn kernels, or the oil will spatter when you grill them!
Garlic: Minced fresh garlic cloves add loads of flavor.
Green Onions: Green onions, cut into 3-inch pieces, give color and a little bite to the recipe.
Salt and Pepper: To taste.
Thyme: Fresh thyme leaves make a pretty and fragrant garnish.
Balsamic Glaze: For serving. This is available at most grocery stores, or you can order it online.
Let’s Make Flatbread Pizza!
The only thing easier than making this pizza? Eating it! Seriously, that’s how simple this little recipe is. Try it once, and you’ll make it again and again. I always make two of these flatbread pizzas because my husband takes an entire pizza for himself, unapologetically.
Prep the Oven and the Crust. First, make sure to preheat the oven to 400˚F. Place the flatbread on a cookie sheet or pizza stone, and lightly drizzle it with olive oil. Layer torn up or sliced mozzarella cheese slices on top of the flatbread and set it aside.
Grill the Toppings. Next, heat a small amount of olive oil in a grill pan set over high heat (if you don’t have a grill pan, you can use a cast-iron skillet or another heavy pan). Add the corn kernels to the hot pan, and grill them for about 2 minutes. Sprinkle the grilled corn over the flatbread, and then return the pan to the heat. Add a little more olive oil, and then grill the green onions for 1 to 2 minutes, or until a little charred. Arrange the cooked green onions over the mozzarella and corn.
Season, Bake, and Broil. Sprinkle salt and pepper over the pizza, and then place it into the oven to bake for 8 minutes. Once the 8 minutes is up, turn the broiler on and broil for 2 minutes, or until the cheese is completely melted and there’s a little bit of browning on top.
Garnish and Serve. Remove your flatbread pizza from the oven. Garnish it with thyme leaves, drizzle with balsamic glaze, and serve.
How Do I Make My Flatbread Pizza Not Soggy?
The key to an
un-soggy pizza (flatbread or otherwise) is to avoid piling on too much of everything OR adding ingredients that are going to turn watery in the oven. So make sure that any sauce you use is thick, not watery, and try to use sauteed or grilled veggies instead of raw.
Baking the pizza in a preheated oven at a good hot temperature is helpful, too – it allows excess liquid to quickly evaporate, instead of sitting on the pizza crust in a pool.
This pizza is great no matter how you slice it (no pun intended), and there are always a few ways you could change it up! Here are a few ideas for inspiration:
Cheese: Whether you don’t like mozzarella all that much, or you just don’t have any on hand, feel free to switch it out for another cheese. Provolone is a great mozzarella-like cheese, and goat cheese would also be great.
Veggies: Changing or adding veggies is always a good option! Bell peppers, mushrooms, spinach, red onions… you can’t go wrong!
Sauce: This pizza basically uses olive oil and plenty of melted cheese, no sauce needed. The drizzle of balsamic is plenty, imho. However, adding something like alfredo or barbeque would be amazing!

Leftovers should be cooled, and then stored in an
airtight container or zip-top bag in the fridge. They’ll last for about 5 days. To reheat, just bake the flatbread pizza at 350˚F until it’s hot and the cheese has re-melted.
Can I Freeze Leftover Pizza?
Yes! You can freeze your leftovers, or cool and freeze the entire flatbread pizza for another time!
Wrap the pizza in plastic wrap and a layer of aluminum foil – it will keep for up to 2 months. Reheat directly from frozen at 350˚F until hot and melted.

▢ 1 flatbread pizza crust, or use my keto pizza crust
▢ 2 tablespoons olive oil, divided, plus more for drizzling
▢ 6 to 8 ounces fresh mozzarella slices, torn or cut up in half
▢ 1 cup corn kernels, if wet, pat them dry with paper towels
▢ 3 to 4 cloves garlic, minced
▢ 6 to 8 green onions, cut into 3 inch pieces
▢ Salt and fresh ground black pepper, to taste
▢ ½ tablespoon Fresh thyme leaves, for serving
▢ 1 tablespoon Balsamic glaze, for serving
Preheat oven to 400˚F.
Place pizza crust on a cookie sheet and lightly drizzle with olive oil.
Layer torn fresh mozzarella cheese over the pizza crust and set aside.
Heat 1 tablespoon olive oil in a grill pan set over high heat.
Add corn kernels to the hot pan and cook for about 2 minutes.
Remove the corn from the pan and sprinkle it over the mozzarella.
Return pan to the heat; add remaining olive oil.
To the hot oil add the green onions and cook for about 2 minutes, or until slightly charred, and stir frequently.
Arrange the cooked green onions over the cheese and corn.
Season the top with salt and pepper.
Bake for 8 minutes.
Turn broiler ON and continue to cook for 2 more minutes, or until cheese is completely melted and there’s a little bit of browning on top.
Remove flatbread pizza from oven.
Garnish with thyme leaves.
Drizzle with balsamic glaze.
Cut and serve.
