Ingredients: 1 cup arugula,2 tablespoons celery, finely chopped,1 tablespoon low fat mayonnaise,4 ounces salmon filets,2 tablespoons sweet onion, finely chopped,2 tablespoons sweet pickle relish,4 slices whole wheat bread,4 slices whole wheat bread
Instructions:

  1. Season salmon filet with salt and pepper and bake in 350 degree oven for 20 minutes until salmon just flakes.
  2. Remove from oven and cool in the refrigerator.Flake cooled salmon and combine with remaining ingredients, except arugula.
  3. Place half the mixture in your bread of choice.Top with arugula.
