Ingredients:
- 1 whole side salmon, scaled, with skin, pin bones removed (2 1/2 to 3 pounds)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground white pepper
- 1 teaspoon coarsely chopped fresh rosemary leaves
- 1 lemon, very thinly sliced
- 1/2 small red onion, thinly sliced
- 8 cloves garlic, thinly sliced
- 1/4 cup extra-virgin olive oil
