Baked Rice Pudding – Eat With Your Eyes

Ingredients: 2 eggs, slightly beaten,2 1/4 cups milk,2/3 cup Minute Rice,1/4 teaspoon nutmeg,1/4 cup raisins,1/2 teaspoon salt,cup sugar,1 teaspoon vanilla
Instructions:

  1. Set oven to 350 degrees F.
  2. Place ingredients in an ungreased 1 1/2 quart round casserole. Set casserole in a pie pan of hot water.
  3. Place pans in oven for 45 minutes.
  4. Mixture will be set around the edge.
  5. Remove from oven. Stir gently.
  6. Let cool 1/2 hour without stirring.
  7. Serve warm or cold.Makes 4 servings.
