banana walnut chocolate chunk breakfast cookies


Loving the soft and chewy texture of these yummies. They remind me of a banana bread – chocolate chip cookie combo. I do want to note that they are not too sweet, so the guilt is semi absent; I definitely prefer it that way. With the oats, they are just right for breakfast or a snack or an after meal treat. Also, once again, my kids are obsessed, so you know they gotta be great. I’m excited to make them again, very very soon..

Ingredients:

  • 1 cup organic all purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp sea salt
  • 1/2 tsp baking soda
  • 3/4 cup unsalted butter, room temp.
  • 1 cup brown sugar
  • 1 large egg
  • 1.5 tsp vanilla extract
  • 1 large ripe banana, mashed
  • 1 cup old fashioned oats
  • 8 oz. dark chocolate, chopped
  • 1/2 cup walnuts, chopped

Directions:

Preheat oven to 375 degrees F. Line 2 baking sheets with parchment paper. Combine the first 4 ingredients in a medium bowl and set aside.

In a large bowl, using an electric mixer, mix the butter and sugar on low setting. Add egg, vanilla and mix until combined. Mix in banana, then add the flour mixture and mix that until combined. Fold in the oats, chocolate chunks and walnuts.

Using an ice cream scoop, drop the dough onto the baking sheets, about 1.5″ apart. Bake them for 12 minutes.

Yields 30 cookies.
