Simple Ingredients
You only need a few ingredients!
- Pita bread– make sure you use pita bread that lays flat so you can make a pizza. You can use regular or whole wheat. You can also use a gluten-free flatbread if you need the recipe to be gluten-free.
- Chicken– we use shredded rotisserie chicken to keep the recipe super easy. You can use leftover cooked chicken if you have it. Just chop or shred it.
- Barbecue sauce– you can make homemade BBQ sauce or use your favorite store bought brand.
- Cheese– we use shredded mozzarella cheese, but smoked mozzarella or even cheddar cheese would be tasty.
- Red onion– thinly sliced!
- Cilantro– for garnish!

Serving Suggestions

If you want to serve a few side dishes to bulk up the meal, here are a few of our favorites.
How to Store & Reheat
The pita pizzas are best hot, right out of the oven, but if you have leftovers, you can store the pizza in the fridge for up to 2 days. Let the pizzas cool completely and store in an airtight container.
To reheat:
- You can reheat the pizzas in the oven at 350 degrees F, just until heated through.
- You can also reheat in a skillet on the stovetop. Place a slice in a non-stick skillet on medium-low for a couple minutes. Once the bottom is crisp, add a couple drops of water to the pan, turn the heat down to low, and cover with a lid. Cook for 1 more minute or until the cheese is nice and melty.
- If you have an air fryer, pop a few slices in the basket and cook at 360 degrees F until cheese is melted. It will only take a couple of minutes.
