Juicy chicken baked in a tasty queso cheese sauce that is super easy to make!

    For the queso sauce:
  • 2 tablespoons butter
  • 2 tablespoons flour (or rice flour for gluten-free)
  • 2 cups chicken broth (or milk)
  • 1 cup cheddar cheese, shredded
  • 1 cup salsa
  • For the queso baked chicken:
  • 1 pound boneless skinless chicken
  • 1 teaspoon taco seasoning
  • 1 cup cheddar cheese, shredded
  • 1 cup tomato, diced
  • 2 green onions, thinly sliced
  • 1 tablespoons cilantro, chopped
    For the queso sauce:
  1. Melt the butter in a saucepan over medium heat until it foams and just starts to turn a light golden brown colour.
  2. Sprinkle in the flour, mix it into butter and cook until it’s a light golden brown colour, about 2-4 minutes.
  3. Add the milk, mix, bring to a simmer and cook until the sauce thickens a bit, about 2-3 minutes.
  4. Add the cheese and cook until it melts before mixing in the salsa and enjoying!
  5. For the queso baked chicken:
  6. Season the chicken with the taco seasoning and place in a baking pan.
  7. Pour thew queso sauce over the chicken
  8. Sprinkle on the cheese.
  9. Bake in a preheated 350F/180C oven until the chicken is cooked through, about 30-40 minutes.

Tip: serve with tortilla chips on the side and pour the queso sauce over them!
