  1. Soak your Ancho and Guajilo chiles in a bowl.
  2. Sear your roast in a Dutch oven, then set the roast aside.
  3. In the pot, simmer your short ribs with the spices and chiles.
  4. Remove the short ribs form the pot and refrigerate the braising liquid.
  5. Slow cook the roast and short ribs in your Dutch oven with the remaining ingredients.
  6. Dip your tortillas in the braising liquid and cook in a skillet.
  7. Assemble the tacos, serve and enjoy!
