Breakfast Meatballs are such a fun alternative to boring sausage or bacon for your breakfast or brunch! The perfect combo of savory and sweet, with a little maple syrup to make them extra delicious!
How are breakfast meatballs not a WHOLE THING in the world?
Actually don’t answer that…maybe they are and I’ve been living under a rock? I REFUSE to google this because I want to live in my food-inventor-bliss for as long as I can.
But here’s the thing, I am in the food business…my life basically revolves around it…and never have I heard of a breakfast meatball. So in my mind, I invented them. Can we just agree to let me have my moment?
Ok, I just googled it. I couldn’t help myself. APPARENTLYYYYY they’ve already been invented. Fine. Whatever.
But the idea was new to me, so I am gonna guess that there are a few of you who think this is a pretty smart idea. The savoriness of the breakfast sausage mixed with grated onions and cheddar cheese paired with sweet Granny Smith Apples and maple syrup, yes 100.
They really are a quick side for a weekend breakfast or brunch, and certainly can be made ahead for weekday breakfasts as well. You could even assemble the meatballs in the evening and bake them the next morning.
I HIGHLY recommend you serve them with my most favorite Brown Sugar Pancakes. You’ll thank me later!
I like to bake these meatballs, but you could certainly fry them in a skillet as well.
And I highly recommend a healthy drizzle of maple syrup on top. SO good!
I first made this recipe back in January of this year and have tweaked it a few times, coming up with the recipe I am sharing today. I wanted to make them as easy, and delicious as possible.

Breakfast Meatballs
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 20 meatballs
Ingredients
- 1 pound breakfast sausage
- 1 small Granny Smith Apple, peeled and grated (about 1/2 cup)
- 1/2 cup plain breadcrumbs
- 1/2 cup grated sharp cheddar cheese
- 1/4 cup grated onion
- 1 teaspoon dried thyme
- 1/2 cup maple syrup
Instructions
- Preheat oven to 350°F. Line a baking sheet with aluminum foil and coat lightly with nonstick spray. Set aside.
- In a large bowl combine the sausage, apples, breadcrumbs, cheese, onion, and thyme with a wooden spoon or your hands.
- Form the mixture into golfball-sized meatballs, about 1 1/2- inches in diameter. Place evenly spaced on the prepared baking sheet.
- Bake for 20 minutes, or until the meatballs have cooked through.
- Drizzle with maple syrup and serve warm.
