Well, goooood morning! I’m so excited to share this Breakfast Rice Scramble with y’all. Rice probably makes it to your dinner plate on the regular, but what about breakfast? No? You’re missing out! Rice is filling, nutritious, and goes great with your favorite breakfast staples. I love this recipe for an every day breakfast or for a family brunch where I’m feeding an army because it’s healthy, versatile, and so delicious. It’s a great use for leftover rice from a meal before. Change it up by adding different veggies or top with a fried egg for extra yum! You absolutely can’t go wrong!

Bonus, it all comes together in a skillet, so clean-up is easy peasy. Ready to get started?

Quickie: How to Make Rice

For those new to the magic of rice, I did a quick how-to in The BakerMama’s Basics: How to Cook Rice. I know some of y’all are dedicated to your rice cookers, and that works, too!

I’m a huge fan of RiceSelect® products. I love their selection of rice varieties and the quality of the rice once it’s cooked. The texture and flavor of the rice is amazing. I follow the package directions and it turns out perfect every time:

Combine your rice, water, and butter in a medium saucepan, and bring to a boil. Stir once and cover with a tight-fitting lid. Reduce heat and simmer for 15 minutes. Remove from heat and let stand for 5-10 minutes. This lets the rice absorb more moisture. Fluff with a fork and serve!

Let’s Get Scramblin’!

First, add the garlic, chopped onion, and diced bacon to a large skillet over medium heat and cook until the bacon is crisp. Next, add the spinach and cherry tomatoes and let it all cook together for a couple of minutes until the spinach starts to wilt.

Meanwhile, whisk together the eggs, milk, and salt in a medium mixing bowl until well-combined. Pour the egg mixture into the skillet and let cook, gently stirring until eggs are set. One eggs are set, stir in the cooked rice.

Finally, remove the skillet from the heat, top with sliced avocado, sprinkle with sliced green onions, and serve! Enjoy!

  • 1 clove garlic, minced
  • ¼ cup chopped onion
  • 4 slices bacon, cut into small pieces
  • 1 cup fresh spinach, chopped
  • ½ cup cherry tomatoes, halved
  • 6 large eggs
  • ½ cup milk
  • 1 teaspoon salt
  • 1.5 cups cooked RiceSelect® Texmati rice
  • 1 large avocado, sliced
  • 1/4 cup sliced green onions
  • Salt, to taste

Instructions
