Ingredients

  • 1 ripe fresh pineapple
  • 1/4 cup firmly packed light brown sugar
  • 1/2 teaspoon ground cinnamon

Instructions

Cooking Instructions

  1. Peel the pineapple and slice crosswise into 6 rounds. Remove the core from each slice with a 1-inch cookie cutter.

  2. In a small bowl, combine the brown sugar and cinnamon. Arrange the pineapple slices on a broiler pan. Sprinkle with half the sugar mixture. 

  3. Broil 4 inches from the heat source until golden brown on the edges, 3 or 4 minutes.

  4. Turn the pineapple slices; sprinkle with the remaining sugar mixture and broil until brown on the remaining side, 2 to 3 minutes.

Variations

Top with vanilla frozen yogurt or ice cream.

Substitute maple sugar or crumbled maple-sugar candies for the brown sugar.
