Cajun spiced shrimp on top of homemade fresh guacamole, on top of a crispy tortilla chip is appetizer perfection in one single bite. Problem is that you won’t be able to stop at just one. These are too good to not follow up with at least 10 more bites.
This cajun shrimp and guacamole bites arrangement is an ideal finger food for anyone that loves a bit of creaminess, a bit of crunch, a bit of spice, and a lot of flavor.
HOW TO MAKE CAJUN SHRIMP
We’re first going to start with preparing our shrimp.
- In a big bowl, you’ll need to combine shrimp with cayenne pepper, paprika, thyme, oregano, garlic powder, salt, and pepper.
- Shrimp is then added to hot oil and cooked for about 4 minutes, or until they are bright pink and the meat is no longer transparent.
Set shrimp aside and prepare the Guacamole.
I have this recipe for Basil Guacamole that we really enjoy. It’s just a basic guacamole recipe with added basil. However, if you would like to use your own recipe, or even store-bought guacamole, go right ahead. I won’t be mad atcha.
Only thing left to do is grab a bag of tortilla chips – select those that are still whole and intact – and start arranging your tortilla bites.
Step ONE: spread a tablespoon of guacamole over each tortilla chip.
Step TWO: place shrimp on top of guacamole.
Step THREE: serve.
The cajun shrimp tortilla bites shouldn’t take longer than 20 minutes to make, from start to finish.
HOW TO STORE COOKED SHRIMP
- If you want to make the shrimp ahead of time, after cooking, let shrimp completely cool.
- Place shrimp in airtight containers OR wrap tightly with plastic wrap and heavy duty aluminum foil.
- Store in the fridge for up to 3 days.

Ingredients
FOR THE SHRIMP
- 1 1/2 pounds large shrimp peeled and deveined
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 3/4 teaspoon dried thyme
- 3/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- salt and fresh ground pepper to taste
- 1 tablespoon cooking oil
Instructions
Place shrimp in a large bowl and add paprika, cayenne pepper, thyme, oregano, garlic powder, salt and pepper; mix to combine.
Heat oil in a large nonstick skillet over medium high heat.
Add shrimp to skillet and cook for about 4 minutes, or until shrimp is pink and no longer transparent.
Remove from heat and set shrimp aside.
Prepare the guacamole.
Lay out 16 tortilla chips and spread guacamole over each chip.
Top with prepared shrimp.
Serve.
