I wanted to try something a bit different. Ya know, I’m always lovin the peanut butter, chocolate, brownie something. These bars are completely reminiscent of Girls Scout Samoa Cookies. They taste JUST LIKE the iconic cookie. Drizzle with melted chocolate at the end, and I’m certain they would be identical. I was happy with them though, just the way I made them. Super chewy and 1000% delicious. I highly recommend you try them. They are so easy to throw together.
Ingredients:
- 1/2 cup coconut oil
- 1 cup coconut sugar
- 2 eggs, beaten
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp baking powder
- 1 cup oat flour*
- 1 cup sweetened shredded coconut
Directions:
Preheat oven to 350 F. Line an 8×8″ brownie pan with parchment paper.
In a medium pot, melt coconut oil. Once melted, remove pot from heat and add the sugar, stirring until combined. Next, stir in the eggs, vanilla, salt & baking powder. Then add the flour, a little at a time, until that’s fully incorporated. Lastly, fold in the coconut shreds. Transfer the batter to the brownie pan and bake for 20 minutes. The edges will be golden and the center will be almost set. Allow the bars to cool completely before slicing them into squares. Store leftovers in an airtight container.
*You can sub in all purpose flour for the oat flour.
