I don’t really know why it’s taken me so long to post a meatloaf. It truly is one of the ultimate comfort foods and beyond simple to throw together. Serves perfect with mashed potatoes and salad. Also warms up amazing and in my opinion, better, the next day!
Meatloaf Ingredients:
- 1.5 lbs ground beef
- 1 egg
- 1/3 cup milk
- 4 tbs ketchup
- 1/2 cup bread crumbs (or oats)
- 1/2 cup grated Parmesan cheese
- 1 small onion, diced
- 1 tsp salt
- 1/2 tsp ground pepper
Sauce Ingredients:
- 3 tbs brown sugar
- 3 tbs balsamic vinegar
- 2 tbs Worcestershire Sauce
- 1/3 cup ketchup
Directions:
Preheat oven to 375 F. Line a rimmed baking dish with parchment paper.
In a large bowl, combine all of the meatloaf ingredients until fully incorporated. Shape your meatloaf as pictured below (oblong and thick). Place on baking dish.
In a small bowl, mix all of the sauce ingredients. Pour mixture over meatloaf evenly.
Bake for 50 minutes if using beef. (Bake for 65 minutes if using ground turkey). Allow to rest for 5-10 minutes prior to slicing.
