Cupid's Pancake Kabobs

If you’re looking for a super simple yet super cute treat to make for Valentine’s Day or really any day you want to get creative with the food you serve, these Cupid’s Pancake Kabobs are sure to be a hit! They’re easily made with Trader Joe’s Silver Dollar Pancakes that we cut into hearts with a heart-shaped cookie cutter, strawberries cut into heart shapes, and fresh blueberries. They would be so perfect to make on Valentine’s morning for a special breakfast, to take to a school Valentine’s Day party, or to have waiting for the kids when they get home from school as an afternoon snack.

They’re just so easy to make and would even be a fun activity to do with the kids. My kids sure enjoyed helping cut the pancakes into heart shapes with the cookie cutter as well as putting the blueberries, pancakes and strawberries on the bamboo skewers. And of course, they really enjoyed eating them too!

The silver dollar pancakes are already lightly sweetened so they’re great for eating without even having to serve syrup with them. And they also taste great at room temperature if you just let them defrost completely or microwave them just until they are thawed and soft. We keep a stash of them in the freezer for easy breakfast-on-the-go when we’re in a hurry. I’ll just microwave a plate of them and divide them into small baggies for each kid to eat in the car on the way to school or sports activities.

Also, be sure to cut the sharp pointed end off the bamboo sticks if you are serving them to small children. Or you could use kabob sticks without a pointed end.

So cute, super easy and yummy yum! Everyone is sure to love them. I hope you enjoy making and serving them!

Recipe type: breakfast

Ingredients

  • frozen silver dollar pancakes, thawed
  • strawberries
  • blueberries
  • 12″ bamboo skewers

Instructions

  1. Thaw the pancakes completely at room temperature or in the microwave for about 60 seconds, flipping the pancakes after 30 seconds to thaw them all the way through. Cut the pancakes into heart shapes with a heart-shaped cookie cutter.
  2. Cut the strawberries into heart shapes by slicing each strawberry in half lengthwise. Working with one strawberry half at a time, slice the stem off by making a triangle cut into the top of the strawberry half. Use a sharp knife to round out the tops, if needed to make the heart shape look great. Watch the video within this blog post to see exactly how the heart-shaped strawberries are made.
  3. Thread each bamboo stick with three blueberries, a pancake heart, a strawberry heart, another pancake heart, and three more blueberries. Create as many kabobs as you need for the crowd you’re wanting to feed. Cut the pointed end off of the skewer if you’re serving these to small children.
