A PERFECT OVEN GRILLED STEAK RECIPE
Oven Grilled Steak is a foolproof and easy way to make a juicy steak in the oven. Use this simple trick – roast in the oven, THEN sear on the stovetop – to create the perfect steak that’s caramelized, juicy, and melt-in-your-mouth delicious!
This is how we do grilling off-season because, I’m craving steak. This is huge in my world because I’m not all that into red meat. I kinda like lots of veggies. And chicken.
Besides, look at that hug in a skillet up there. It’s a juicy pile of comfort food and I’m really into it. But I also just made a batch of cookies and I’m really into those, too… SO ?♀️
I always thought that searing the steaks before popping them in the oven was the way it should be done, but I was proven otherwise. Searing the steaks right when they come out of the oven is a kitchen hack I’m glad to have finally learned.
INGREDIENTS FOR THE PERFECT STEAK
To make this Oven Steak recipe, you will need:
- Steak: When it comes to buying steak, I recommend looking for:
- Good-quality: It’s important to me to buy good quality steak. I look for organic, grass-fed and sustainably-raised.
- Thick Cut: I like to use top sirloin steak for this recipe; I recommend your steak to be cut 1 to 1.5 inches thick.
- Oil: Whatever your preferred high-heat cooking oil may be. I like to use olive oil.
- High smoke point oils like peanut oil, vegetable oil, coconut oil, avocado oil, even olive oil are the best. This is because they can withstand the high temperature of the oven broiler for a longer period of time without burning.
- Seasonings: I keep it simple and use only coarse sea salt and fresh ground black pepper. Feel free to use whatever other dried seasonings that you prefer.
You will also need:
- Baking Sheet and an Oven rack: We use a rack so the heat can circulate under the steak, and you won’t have to flip over the meat while cooking.
- A Skillet: I recommend using a cast-iron skillet if you have one. It will hold heat the best and cook the steak evenly. If not, a nonstick heavy-bottomed skillet will do just fine.
- An instant-read thermometer: A cooking thermometer is the best way to ensure with 100% accuracy that your steak reaches the exact degree of preferred doneness.
HOW TO COOK STEAK IN THE OVEN:
- Let the steak rest out on the counter for 20 to 30 minutes, to reach room temperature.
- Next, line a baking sheet with foil and set a rack over the baking sheet.
- Blot steaks dry with paper towels. Then rub both sides of steak with oil. Sprinkle with coarse sea salt and fresh ground pepper.
- Grill in the oven for 20-30 minutes, depending on how you like it cooked.
- In the meantime, cover the bottom of a cast iron skillet with oil; heat the oil over medium heat until hot.
Next, remove the steaks from oven and transfer them to the skillet.
Continue cooking steaks for about 2 to 3 minutes per side, or until browned and a bit crisp.
Last, we transfer the steaks to a cutting board. Let the steaks rest for 10 minutes to lock in all those delicious juices.
Cut, serve, and enjoy!
GUIDE FOR STEAK DONENESS:
- Use an Instant Read Meat Thermometer.
- 125˚F to 130˚F internal temperature for RARE
- 135˚F to 140˚F internal temperature for MEDIUM RARE
- 145˚F to 150˚F internal temperature for MEDIUM TO MEDIUM-WELL
- 160˚F internal temperature for WELL DONE
- The FDA recommends that steak be cooked to an internal temperature of 145˚F.
HOW TO STORE OVEN GRILLED STEAK:
Once the steak has been cooked, it can be stored in a sealed container in the refrigerator for up to 3 days. I would recommend letting the steak cool to near room temperature before placing it in the refrigerator.
Can I Freeze Cooked Meat:
- Yes, leftover cooked beef, pork, or chicken doesn’t have to sit in the refrigerator; you can freeze it for couple months so it’s ready when you need it. I love to prep beef, pork, or chicken on the weekend and use them all week for quick lunches and dinners.
How Long Is Frozen Cooked Steak Good For?
- The USDA recommends to throw away uncooked roasts, steaks, and chops after a year in the freezer; uncooked ground meat after just 4 months.
- Frozen cooked meat should be thrown out after 3 months.
How Do I Properly Reheat A Cooked Steak?
- When you defrost your steak, do so in the refrigerator; take it out of the freezer the night before and leave in the fridge overnight. Take it out of the fridge and let rest at room temperature for at least 20 minutes before reheating.
- Reheat in a 250˚F oven for 20 to 25 minutes, or until heated through.
How Do You Choose Steak?
When shopping for steaks, it’s often best to look for a happy medium between lean and fatty. Look for steaks with some marbling, but not completely covered with fat. Try filet mignon for tenderness, or a ribeye, even strip loin for a balance between tender and flavorful.
What Is The BEST Cut of Steak?
- Porterhouse. This particular steak is considered the “king” of steaks mainly because it’s actually two steaks in one.
- T-bone.
- Top Sirloin. Also a relatively lean cut of steak.

Ingredients
- 2 (9 to 12 ounces, each) top sirloin steaks, room temperature
- 1 tablespoon olive oil, divided
- coarse sea salt and fresh ground pepper, to taste
Instructions
Preheat oven to 275F.
Line a baking sheet with foil.
Set a rack over the baking sheet.
Rub steaks with 1/2 tablespoon olive oil and season with salt and fresh ground pepper.
Place steaks on the rack.
*Grill in the oven for 22 to 30 minutes, depending on how you like it cooked. Please see my notes below for doneness.
In the meantime, cover the bottom of a cast iron skillet or a nonstick skillet with remaining 1/2 tablespoon olive oil; heat the oil over medium heat until smoking hot.
Remove steaks from oven and transfer to the hot skillet.
Cook steaks for about 2 to 3 minutes per side, or until browned and a bit crisp.
Transfer to a cutting board and let stand 10 minutes.
Cut and serve.
