Small but Mighty
Does food taste better when it’s tiny? MAYBE. Like these Family Favorite Mini Pancakes–they’re about as cute as can be. And because they’re pancakes, they’re delicious. Stackable, poppable, perfect for dipping, they make a fun alternative to one of your all-time breakfast favorites.
Getting the whole family involved in the kitchen makes me so happy. And this mini pancake recipe is simple enough for the kids to help. In fact, they’re part of my Kid-Friendly Breakfast Board. So, round up those kiddos and let’s get cooking!
How to Make Family Favorite Mini Pancakes
In a large bowl, melt the butter and let cool slightly. Whisk in the sugar then the milk, eggs and vanilla. Stir in the flour and baking soda.
Heat a skillet or griddle over medium heat. Once the skillet is hot, use a ½ teaspoon measuring spoon to scoop batter onto the skillet. Let the batter cook until you see bubbles start to form on top, about 45 seconds. Flip and cook on the other side for 30-45 seconds or until light brown on both sides.
Serve with syrup to dip them in or drizzle over them.
