Ingredients
- 2 cups of mixed greens
- 1 cup of cherry tomatoes
- 1 cucumber
- 1/2 red onion
- 1/2 cup of crumbled feta cheese
- 1/4 cup of chopped fresh basil
- 1/4 cup of chopped fresh parsley
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Directions
- Wash and dry the mixed greens and cherry tomatoes.
- Peel and chop the cucumber and red onion. Add to the mixed greens and tomatoes.
- Add the crumbled feta cheese, fresh basil, and fresh parsley to the bowl.
- In a separate bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to coat all the ingredients.
- Serve immediately and enjoy!
