Ingredients
- 1 head of lettuce
- 1 cucumber, sliced
- 1 large tomato, chopped
- 1 red bell pepper, chopped
- 1/2 red onion, sliced
- 1 cup of cooked quinoa
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint, chopped
- 1/4 cup of olive oil
- 2 tablespoons of freshly squeezed lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Wash and chop the lettuce, cucumber, tomato, red bell pepper, and red onion.
- Place the chopped vegetables in a large salad bowl.
- Cook the quinoa according to package instructions and let it cool.
- Once the quinoa has cooled, add it to the salad bowl and mix well.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
- Pour the dressing over the salad and mix well, making sure all the vegetables and quinoa are coated.
- Chop the parsley and mint and sprinkle them over the top of the salad.
