And the funny thing is, it’s incredibly easy!! I don’t know why I bought pre-made salad dressings for so many years!

How to make Greek Salad Dressing

Making any type of vinaigrette-type dressing is easy and follows a basic formula: 1 part vinegar (or acid) to 4 parts oil, or 1 fluid ounce vinegar to 4 fluid ounces of oil. That’s it…the rest is all flavor! If you prefer a more acidic dressing, you can certainly play around with this formula, but it’s a great starting place.

As for flavor in this Greek Dressing, there are definitely a few ingredients you will need:

  • Use Olive Oil, BUT not Extra Virgin Olive Oil. EVOO has a stronger flavor that I don’t prefer in salad dressings. I like a milder oil so the flavor from the herbs can really shine. PLUS it costs a little more, and it’s nice to be able to save where you can!
  • Red Wine Vinegar is essential in Greek Salad Dressing. You can also amp up the acid with a squeeze of lemon juice, which brightens up the flavor even more, but that’s up to you!
  • Oregano is a MUST in this recipe, and go ahead and use dried herbs. Fresh herbs can turn a dark color in salad dressing, and if you are not using this all the same day, it’s visually unappealing.
  • Dijon Mustard is my secret ingredient here. It definitely doesn’t give the dressing a mustard flavor at all, it just enhances the other flavors.

How to make Creamy Greek Dressing

One more add -in, if you want a salty punch to the dressing you can add in some fine Feta crumbles. It is a really nice addition to the dressing, and gives it a slightly creamy consistency. You could even add a tablespoon or two of Greek yogurt if you really want a creamy dressing!  But note, if you do add cheese or yogurt, it won’t last as long in the refrigerator, up to 5 days.

Ingredients

  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 2 teaspoons oregano
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground black pepper
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons dijon mustard

Instructions

  1. Whisk all ingredients together in a medium bowl until combined.
  2. Serve immediately or refrigerate for over 3 hours for flavors to combine.

Notes

Store airtight in refrigerator for up to 2 weeks.

If you can, make the Greek dressing ahead, so the flavors combine nicely.
