Grilled Asparagus in Lemon Maple Tahini with Tomatoes and Cucumbers

Smokey grilled asparagus in a tasty tahini sauce with lemon and maple along with fresh diced tomatoes and cucumbers!

ingredients
    For the grilled asparagus:
  • 1 pound asparagus, rinsed and trimmed
  • 1 tablespoon oil
  • salt and pepper to taste
  • For the tahini sauce:
  • 3 tablespoons tahini
  • 1 tablespoon yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon maple syrup
  • salt tp taste
  • 1 small clove garlic, grated
  • 2 tablespoons water*
  • For the salad:
  • 1/2 cup cucumber, diced
  • 1/2 cup tomato, diced
  • 2 tablespoons kalamata olives, pitted and chopped
  • 2 tablespoons red onion, diced
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon parsley, chopped
directions
    For the grilled asparagus:
  1. Toss the asparagus spears in the oil, salt and pepper and grill over medium-high heat until crisp-tender and slightly charred.
  2. For the tahini sauce:
  3. Mix everything, along with enough water to get a nice smooth sauce consistency.
  4. For the salad:
  5. Serve the asparagus, optionally sliced into bite sized pieces, topped with the sauce and the remaining salad ingredients.

Option: Replace the salt with white miso paste!
Option: Replace the parsley with mint, cilantro, or basil!
