It’s a Party in a Pan

You know what they say: go big or go home. And if this Sheet Pan Pop Tart isn’t going big, I don’t know what is! We’ve always loved making the homemade version of our favorite toaster pastries. But one day I thought, what if I took my favorite pop tarts recipe and made it… party-sized? And voila! This oversized pop tart makes such a fun breakfast treat that’s perfect to serve at a slumber party or for a birthday.

Step into the kitchen with me to make this Strawberry Sheet Pan Pop Tart. It’s such a simple way to turn up the fun in any breakfast celebration.

What’s in a Homemade Strawberry Pop Tart?

While this sheet pan pop tart isn’t any less sugary than a store bought pop tart, what it doesn’t have is a ton of preservatives. And believe me, nobody will miss them.

  • Pie Crust – I used store bought ready-to-bake pie crusts to make it quickly, but if you want to make a truly homemade pop tart, I have a great recipe for pie crust that turns out perfect every time!
  • Strawberry Jam or Strawberry Preserves – I like to use Bonne Maman strawberry preserves because it’s our family’s favorite, but feel free to use the strawberry jam or preserves that you enjoy most.
  • Butter – I use a high quality unsalted butter to brush the top of the pop tart with so it bakes to a beautiful golden brown color. It’s best if you brush the butter on while it’s softened, not melted, for even crispness and color.
  • Icing – A quick and simple icing made of powdered sugar and milk. It makes enough to spread over the top of the middle of the pop tart. Feel free to make a double batch if you like extra icing on top or for dipping the pop tart crusts into.
  • Sprinkles!Rainbow sprinkles are my go-to on this sheet pan pop tart for birthdays and slumber parties. I also love getting festive with the sprinkles for holidays like Valentine’s Day, Christmas and Halloween.

Common Questions About Homemade Pop Tarts

Can I use puff pastry instead of pie crust? You can, but keep in mind it would puff up and it would look and taste more like a toaster strudel than a pop tart.

Can I freeze a homemade pop tart? Absolutely. First, allow the homemade strawberry pop tart to cool completely and make sure the icing is set. Then, slice it into squares and freeze in individual freezer-safe bags or a freezer-safe container with parchment paper squares between each slice. It should keep for up to three months in the freezer.

How do I reheat a frozen sheet pan pop tart? Unseal and let set out at room temp to defrost. Then reheat each slice in the microwave for 10 seconds or in a toaster oven. Do not reheat it in a standing toaster, though, as the filling and icing will drip into the toaster.

Can I make a sheet pan pop tart the night before? Yes, you can make this sheet pan pop tart ahead of time. It keeps great for 3-4 days at room temperature. Kind of like a pie!

How to Make a Sheet Pan Pop Tart

  • First, preheat oven to 375°F. On a large cutting board or flat work surface, roll two of the ready-to-bake pie crusts together. Use a pastry wheel/pastry cutter or sharp knife to cut the combined crusts to measure a rectangle that is 12×16-inches or the best size that will fit your sheet pan.
  • Gently roll the crust up and transfer it to a large sheet pan that has been sprayed with non-stick cooking spray.
  • Spread the strawberry jam on the center of the pie crust, making sure to leave a 1-inch border around the edges.
  • On the same large cutting board, roll the other two ready-to-bake pie crusts together and trim so that it is the same size rectangle you have already on the sheet pan. Gently roll the top crust up and transfer it to lay evenly over the top of the strawberry jam topped crust on the sheet pan.
  • Using your fingers, pinch together the two crusts all around the edges of the pop tart. Then use a fork to gently press and seal the edges together to seal the jam in.

  • Using a toothpick, poke holes all over the top of the center of the pop tart to allow steam to escape while baking.
  • Brush all over the top and edges with softened butter. Bake for about 25 minutes or until the crust is golden brown, rotating the sheet pan halfway through the baking time.

Note! If you’re not using a rimmed sheet pan and the jam starts to seep out of the edges, either place a larger pan underneath the pan in the oven so the jam doesn’t drip into your oven or remove e the pop tart and scoop the jam from the pan and then return it to the oven to continue baking.

  • Remove from the oven and let cool. In a small bowl, whisk together the powdered sugar and milk until smooth and of spreading consistency.

  • Spread icing on the pop tart leaving the crimped edges showing. Immediately sprinkle with sprinkles. Cut into squares (a pizza cutter works great for this!) and serve.

  12. In a small mixing bowl, whisk together the powdered sugar and milk until smooth and of spreading consistency.
  13. Spread icing on top of the center of the pop tart leaving the crimped edges showing. Immediately sprinkle with sprinkles.
  14. Slice and serve.
