This burger is so necessary in life. It’s just right spicy, and deliciously cheesy. And all of the ingredients make it oh so perfect. Aside from the extra melted cheddar cheese (completely unnecessary – but so good), I also added sautéed baby onions (in olive oil, salt and pepper), romaine lettuce and sliced avocado, all on an Ezekiel sprouted bun – my tummy is VERY happy.
Ingredients:
- 3-4 jalapeños, seeded & chopped
- 4 pearl tomatoes, sliced in half & squeezed*
- 2 cloves garlic, chopped
- 1/2 medium red onion, chopped
- 1 small bunch fresh basil
- 1 lb ground turkey
- 4 oz sharp cheddar cheese, cubed
- 1 large egg
- 1/3 cup bread crumb (or oats)
- 1 tbs olive oil
- 1 tsp ground cumin
- sea salt & ground pepper to taste
Directions:
*For the tomatoes, slice them in half and squeeze them as if they were lemon wedges, of all their juices. Discard the juice. You can also use 2 roma tomatoes.
In a food processor, chop the jalapeños, tomatoes, garlic, onion and basil. Try to drain/strain the mixture of any excess fluid; if you don’t, you might have to add a bit more breadcrumb to soak up the liquid.
In a large bowl, using a rubber spatula, gently combine all of the ingredients (tomato mixture with everything else).
Form your patties and place them on wax or parchment paper. Remember, they do shrink a bit, so don’t form them too small.
Heat a grill pan on medium high heat. When pan is hot, add the patties. Reduce heat to medium, and cook about 5 minutes on each side (more time if they are thick).
Yields 4-6 patties.
