Keto Paleo Almond Butter Bread

This is an all-purpose bread recipe that has a mild, smooth flavor. The texture is exactly the same of a loaf of regular bread, and it is great toasted as well.



  • Olive oil, for greasing
  • 4 large eggs
  • 1/2
    cup (132 g) smooth almond butter
  • 2 tablespoons (24 g) LAKANTO® or erythritol (see page 168)
  • 3/4
    cup (72 g) egg white protein (see note)
  • 2 teaspoons (8 g) aluminum-free baking powder


  1. Preheat the oven to 300°F (149°C). Grease a loaf pan with olive oil.

  2. In a large bowl, mix the eggs, almond butter and sweetener with an electric whisk, until smooth and foamy. Add the egg white protein and baking powder and continue whisking until the batter is smooth.

  3. Pour into the loaf pan. Bake for 30 minutes, or until a toothpick comes out clean from the middle of the loaf. Do not overbake or the loaf will be dry.

Note: Egg white protein can be found on the Internet, Amazon or Thrive Market, or in health food stores.
