My usual gluten free recipe here, but this time I used sweet potato for the veggie puree. I of course love sweet potatoes and get excited when its a part of any recipe, he he he. I topped the waffles with maple syrup and fresh fruit… they didn’t last very long. To make them mini sized, just pour about half of what you would normally pour in the waffle maker for a standard sized waffle.
Ingredients:
- 1/2 cup gluten free flour*
- 1/3 cup oat flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sweet potato purée
- 1/2 cup milk of choice
- 1 egg, lightly beaten
- 1.5 tbs honey
- 1 tsp vanilla extract
Directions:
Whisk together all of dry ingredients in one bowl.
Combine all wet ingredients in another bowl.
Finally, add the wet to the dry and mix until fully incorporated.
Spray or grease waffle maker with coconut oil. Pour about 1/4 cup batter onto waffle maker. Follow your waffle maker’s instructions.
Yields 10 mini/”silver dollar” waffles.
*You can substitute in regular all purpose flour for the gluten free.
