Spanakopita is a traditional Greek dish made with spinach and feta cheese wrapped in phyllo pastry. This recipe is a vegan version of the classic dish that is just as delicious and easy to make. Ingredients
Vegan Feta Cheese (4 oz)
Fresh Spinach (10 oz)
Phyllo Pastry (16 oz)
Lemon Juice (1 Tbsp)
Olive Oil (2 Tbsp)
Dried Dill (1 tsp)
Sea Salt (1/2 tsp)
Ground Nutmeg (1/4 tsp)
Directions
Step 1
- Preheat the oven to 375°F/190°C.
- Thaw phyllo pastry according to package directions.
Step 2
- Wash and chop spinach.
- In a large bowl, mix spinach, vegan feta cheese, lemon juice, olive oil, dried dill, sea salt and ground nutmeg until combined.
Step 3
- Unroll phyllo pastry and cut into strips about 2 inches wide.
- Take a strip of phyllo pastry and brush with olive oil.
- Place a tablespoon of spinach mixture on one end of the strip.
