Onion Jam Tartlets – Eat With Your Eyes

Ingredients: 50 mls balsamic vinegar,25 grams brown sugar,5 ounces cold butter,15 grams butter,1 egg+ 1 Tbs cold water,1 sprig fresh thyme,salt and fresh ground pepper to taste,10 ounces plain flour,500 grams red onions, sliced,1/4 teaspoon salt
Instructions:

  1. Jam:Melt butter in pan.
  2. Add onions, salt, pepper and thyme sprig.Cook on low to medium heat until onions are soft and translucent, not browned.
  3. Add sugar and vinegar and continue cooking on low heat until most of the liquid is absorbed by the onions and mixture is the consistency of jam.
