What are the key ingredients in this traditional Greek dinner recipe?
Ingredients:
- 1 lb. lamb shoulder, cut into cubes
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp. olive oil
- 1 cup white wine
- 1 cup chicken stock
- 1 can diced tomatoes
- 1 tsp. ground cinnamon
- 1 tsp. ground cumin
- 1 tsp. dried oregano
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup feta cheese, crumbled
Instructions:
- Preheat the oven to 350°F.
- Heat the olive oil in a large oven-safe pot over medium-high heat. Add the lamb and brown on all sides, about 5 minutes.
- Add the onion and garlic and sauté for 2-3 minutes, until the onion is softened.
- Add the white wine and cook for 2-3 minutes, scraping the bottom of the pot to release any browned bits.
- Add the chicken stock, diced tomatoes, cinnamon, cumin, oregano, red pepper flakes, salt, and black pepper. Bring to a simmer.
- Remove from heat, cover with a lid, and transfer to the oven. Bake for 1 hour.
- Remove from the oven and sprinkle the feta cheese over the top. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Serve hot with crusty bread, rice, or a Greek salad on the side. Enjoy!
Tips:
- This recipe can also be made in a slow cooker. Brown the lamb and sauté the onion and garlic in a large skillet, then transfer to a slow cooker along with the remaining ingredients. Cook on low for 8 hours or on high for 4 hours.
- This dish is traditionally called “Kleftiko” and is often served with lemon wedges on the side.
- If you can’t find lamb shoulder, you can use lamb stew meat or beef stew meat instead.
