Pistachio and Lime Financiers – Eat With Your Eyes

Ingredients: 1/4 cup of buckwheat flour,185 grams of melted butter,6 egg whites,1 1/2 cups of icing sugar,1 tablespoon of lime juice,2 teaspoons of finely grated lime rind,1 1/2 cups roasted pistachios,1/4 cup of rice flour
Instructions:

  1. Add in butter, sifted sugar, flours, lime juice and rind and nuts.
  2. Mix well.Spoon the mixture into pans and bake about 20 minutes. Stand them in pans for 5 minutes and take them out onto a wire rack to cool.
  3. Brush with hot sugar syrup.
