Simple Egg Salad – Eat With Your Eyes

Ingredients: 1 hardboiled egg, peeled and diced,2 Tbsp mayonnaise,1/2-1 tsp Dijon mustard,1/4 tsp paprika, sweet or smoked,1/4 tsp fresh chives, minced,Salt and Pepper to taste
Instructions:

  1. Combine all ingredients in a small bowl, mixing well to combine.
  2. Serve between slices of (gluten free!) bread, as filling in a lettuce wrap, or over lettuce as a salad.
